One thing I constantly struggle with is leftovers.
My family kinda hates them and I rarely have enough for a full second night of dinner for the five of us anyway.
Sometimes, I eat them for lunch and that’s easy.
But other times they sit in my fridge for days inching closer and closer to winding up in the garbage can.
Last week I made my fried pork chops.
They came out exceptionally well, but we didn’t get all of them eaten.
Into the fridge they went where I feared they would be left to die a hairy, moldy death.
Only the next day, I had an epiphany… pork fried rice!
It is the perfect one pot meal that the whole family loves.
Super filling, super quick, guilt free dinner –so totally my jam!
One Pot Meal: Easy Pork Fried Rice
- 1 T. Sesame oil
- 2 chopped green onions
- 1 cup sugar snap peas
- Leftover fried pork chops (you can use chicken or beef or whatever you want), chopped
- White or brown rice (I used leftover)
- ½ t garlic powder
- salt & pepper to taste
- ¼ c soy sauce
- 1 egg
- Heat oil in large skillet, use a wok if you have one
- Add green onions
- Add sugar snap peas
- Saute for about 3 minutes
- Add pork, let warm for about a minute
- Add rice and stir to combine
- Add seasonings and soy sauce
- Stir to combine
- Crack egg directly on top
- Stir to cook, breaking up pieces to spread evenly around
- Serve like a boss with those little wontons you get from Costco
