My Favorite Watermelon Salad & 10 Creative Watermelon Recipes

This family consumes one to two full watermelons every week in the summer.

And I’m not talking about those mini organic ones you get from like Whole Foods.

I’m talking those big mama jamma’s from Costco. The ones I have to bend at the knee to get in my car from under the cart.

Those.

They are cheap and delicious and healthy (seriously, they have a huge dose of Vitamin C, Vitamin A, dietary fiber, and Potassium!). Plus, every member of this family loves a refreshing side of watermelon at breakfast, or lunch, or dinner, or just, like, 3:30 on a Tuesday.

I personally credit summer watermelon with my weight loss success this summer.

I mean, not to say that I have been widely successful, but I have also not been wildly unsuccessful.

I’ve lost about 8lbs total, despite not being able to make it to the gym with any level of consistency.

Watermelon. Thank you.

Mostly we are happy to eat it plain.

Just cut up, in a bowl, with a smile.

But, from time to time, I get fancy with it.

Bacon, Feta, Watermelon Salad

This was me staring at two slices of leftover bacon all morning one day last week.

I thought about making an egg and popping open that can of buttermilk biscuits I’ve been saving.

But then I remembered my battle with the bulge and I decided that the last thing I need in my life is a whole can of biscuits (because each of the Dudes would eat one, leaving me with 5 sitting on the counter taunting me until I end their lives).

So, I got out my trusty basically-just-flavored-water-you-can-chew melon, sprinkled it with bacon, and added some Feta cheese crumbles.

Best. Snack. Ever.

I’ve since served it at a BBQ and as a dinner side dish.

People love it.

Watermelon. Thank you.

10 Creative Watermelon Recipes to Enjoy This Summer

Watermelon Salad with Feta & Blueberry. If you like the feta but not the bacon, try this mixture instead. And then, unfriend me on Facebook. Because BACON IS EVERYTHING.

Watermelon Lemonade. For those that prefer to drink their melon.

Mexican Fruit Salad. The spicy version for those who enjoy a little kick with their fruit.

Watermelon Strawberry Sangria. If you’d like to be drunk via watermelon.

Watermelon Prosciutto Bites. For when you want your melon wrapped in meat that isn’t quite bacon. Which is cool, but like, really, bacon is better.

Watermelon Salad with Cucumber. I like that this is chopped. And crunchy. Watermelon is good with something crunchy on top.

Watermelon Salsa. I am not sold on this one, however, The Pioneer Woman says it’s good and no one in their right mind is going to argue food or photos with the Pioneer Woman. One of you try it and tell me what you think.

Watermelon, Feta, Arugula Salad. Arugula is my favorite word. I’d try it just for that. The Balsamic glaze this dude whips up though makes it worth adding to my next salad adventure. So like, tomorrow. I am making this tomorrow.

Watermelon, Pineapple Smoothie. As the name suggest, the pineapple cup this smoothie is served in is WAY too ambitious for me and my life. But, the smoothie itself looks delish. I’ll just pour mine in a cup and add a scoop of rainbow sherbet to it. Because that’s my idea of fancy!

Watermelon Popsicles. But, if you’re me, and you’ve never purchased Popsicle molds, you can just use ice cube trays and mini Popsicle sticks. Works like a charm.
