Every summer I tell myself I am going to cook light and eat light and be all summery in the kitchen.
I know it’s what’s best.
For health and general comfort.
However, real life.
Real life is making a wonderful hearty salad for your family only to have them pick all of the bacon off and then come back 12 minutes into you cleaning the kitchen begging for food.
Because hungry. And salad is groooossss.
A few weeks of this and them rebelling over my light inspired meals and you wind up with this…

and, most deliciously, this…
All things you may just need in your life.
But let’s focus on the bacon covered fried potatoes.
Clearly they are the most appealing (although, the other two options are not shabby).
My children are major fans of fried potatoes (once i convinced them they’re basically just French fries cut into squares) and they would eat only them for dinner if that was a thing I would be down for (I am not saying I’m not). I know for sure we eat piles of them for lunch (with bowls of fresh fruit on the side) as often as I feel like cooking them.
They are easy to make, hard to ruin, and always just exactly what you need even when you’re being silly and you think you don’t.
Bacon Cheddar Fried Potatoes
- 6-8 large potatoes
- 4 slices bacon
- ½ diced onion
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (I often use the pre-shredded Mexican cheese -adds a little kick)
- Cut potatoes into thin slices or small squares (I usually do squares because they are easier)
- Place in bowl and cover with cold water
- Cook bacon in a skillet (make sure it has a top)
- When finished, drain and pat dry potatoes
- Add onion to pan, cook until soft
- Add potatoes to pan
- Salt and pepper to taste
- Fry for about 2 minutes
- Cover and reduce heat to medium (if your pan is dry, you may add a few tablespoons of water)
- Let cook for about 5 minutes
- Stir
- If not fork tender, replace top and cook for another 3-5 minutes
- If tender, remove top and turn heat to high
- Fry until crispy (about two minutes, you don't want a bunch of burny bits in there)
- Remove from pan to serving dish or plates
- Crumble bacon on top
- Immediately top with cheese so it can get melty
- Do a little dance, make a little love, get down tonight!
