Real talk, the Dude Family is not a salad loving family.
I find them pleasing personally, but when it comes to The Dudes, old and young, they are hungrier than that.
And not as much into roughage.
The Dudes see salads as an appetizer I force them to eat so they can poop regular.
They don’t understand salad as an entree, and they don’t care to know it as even a side dish.
They want meat, and potatoes, and if I am blabbing on about veggies then they will go with broccoli –the kind with cheese smeared all over it.
I am trying to change that.
And, summer is my ally in this effort.
Because if there is one thing they side eye more than salad, it’s a house heated up from running the stove and oven all day.
They come in from horsing around outside, disrobe, and lay on the tile floors like puppies.
Everyone moans and begs to be sprayed down with the hose like puppies.
Eventually they will climb all over each other and fight for something to eat, like puppies.
If that something is a tasty salad with cool, yummy dressing and hearty, fresh ingredients that fills their bellies without making them sweat more, they are a little bit for it!
A couple of weeks ago I made a taco salad that they killed, because tacos, so I figured I’d go with another sure win –bacon!
Bacon + Egg + Cheese + Ranch Dressing
This bacon, egg, and cheese salad is so, super easy, but next level delicious. And, with the help of Litehouse Homestlye Ranch Dressing, it makes the perfect dinner entree that is filling, and fresh, and cool, and simple.
Really, you don’t even need a step by step recipe for this one guys, I won’t even insult you with that.
Just buy a bagged salad mix and chop it up, because chopped salad is better with its perfectly bite sized goodness. Divide it among your individual dishes.
Chop an avocado and throw that on top of each.
Then, cook up some bacon (we love bacon so we get at least two pieces per person). When it’s finished fry up some eggs (one per person).
Place 2 pieces of deliciously cooked bacon and one yummy fried egg on top of each person’s dish of chopped salad.
Add ranch dressing (we used the Litehouse Homestyle Ranch version), sprinkle with feta cheese, and eat, eat, eat.
