Because when you are a mostly-work-from-home-sometimes-work-out-of-home-but-with-the-luxury-of-a-really-flexible-schedule your house because THE house for teacher-work-days-snow-days-and-any-other-days-when-most-parents-have-to-work-but-kids-randomly-don’t-have-school.
Normally I am a dry-cereal-or-hurry-up-and-get-some-toast-and-eat-it-on-the-way-to-the-bus breakfast mom.
But, when I have time to roll out of bed at my leisure, I am a beast at creating a masterpiece out of the most important meal of the day.
Particularly when I am in charge of feeding seven children, only three of which climbed out of my womb.
Nothing quiets a crazy morning kid crowd like the promise of homemade pancakes.
Here are the ones I serve to get the kid party started…
Brown Sugar Cinnamon Fluffy Pancakes
Ingredients
2 cup flour
1/2 cup brown sugar
4 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cinnamon
2 cups milk
4 tablespoons melted butter
2 large eggs
Directions: Probably you all know how to make pancakes, but just in case you are my sons trying to surprise me with breakfast in bed on Mother’s Day hint-hint don’t…
1. Pancakes are easiest on a griddle, because it’s big and flat. You can use a skillet if you want of course. I like to ready my pancake griddle by cooking a couple of pieces of bacon on it. FLAVORING. But, if that’s not your thing use butter. Cooking spray is fine too, but you’re getting close to ruining the awesome of this whole thing so watch it.
2. Mix the wet stuff in a bowl.
3. Add the dry stuff. Mix. Mix. Mix it good.
4. Pour your batter onto your griddle. It will spread. When it has spread to the pancake size you like best, stop pouring.
5. Cook on medium heat until the top gets bubbly (2-3 minutes probably). Then, flip. Cook another few minutes. Life up an edge with your spatula and take a peek. If they look brown and yummy, they’re ready for eating. If they still look kinda light, they aren’t; give them a couple more minutes to brown up.
*Tip: You don’t want to cook them to fast on high heat because then they will get all burn-y. Kids don’t like burn-y pancakes. Really, no one does.
6. Remove from heat. Butter, syrup, serve.
Feel free to stop by for breakfast anytime. Just call first. So I can like, put on a bra straighten up a bit.
Why are my pancakes not that fluffy? Ben’s first Valentine’s I tried to make him heart shaped pancakes and I can’t even tell you what came out. Gooey flop that was not edible, in the last 6 years I have improved but not to that fluffy perfection!
One of my favorite combos, brown sugar and cinnamon! Yum, yum, yum! AND I was just looking for a new recipe to try with the family this weekend. Can’t wait to try them!
