Easy, light chicken Parmesan for family week night meals
Ingredients
10 chicken breast tenderloins (you can use regular breasts, but slice them thin so they cook more quickly)
Salt and pepper
Garlic powder
Oregano
1 cup whole wheat panko bread crumbs
1 cup whole wheat flour
1 cup milk
Coconut oil (you guys know I use it for everything, olive & vegetable work fine in its place)
1 jar of your favorite marinara sauce (make your own if you want to, that work is on you)
1 cup shredded Parmesan cheese
1 bag spinach
Instructions
Place chicken breasts in shallow bowl and cover with milk
Combine all of your seasonings with your flour in a separate shallow bowl.
In a third bowl (yes, you have some dishes to do later) place your bread crumbs.
Place coconut oil in your skillet on medium heat (coconut oil gets burny quickly so don't make your oil too hot), use just enough to cover the entire surface (it depends on which pan I use but it's usually ¼-1/2 cup).
Turn oven on to 400 to preheat.
Take each chicken from milk, dip in flour, dip in milk again, dip in bread crumbs so they cover each side then place in pan to brown.
Once browned on both sides (about 3 minutes each side), remove from heat onto metal rack to drip.
In a large casserole pan, pour half of your sauce on bottom of pan to coat.
Place browned chicken breasts inside.
Top each breast with a few spinach leaves.
Sprinkle with cheese.
Bake in oven on 400 for about 20 minutes.
Serve with pasta and remain sauce (you may want to warm it because cold sauce us gross sauce) or salad, whichever your people prefer.
