My Secret Ingredient Banana Bread

One secret ingredient makes this bread moist and delicious.
  • ½ cup soft butter
  • 1 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1⅔ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 medium super-ripe-kinda-black bananas, mashed
  • ¼ cup sour cream
  • ½ cup chopped walnuts (optional)
  1. Preheat oven to 350.
  2. Prep loaf pan (I use cooking spray and then cover with flour so the bread doesn't get stuck).
  3. Mash the bananas in a bowl.
  4. Add sour cream and vanilla.
  5. Stir.
  6. In a separate bowl, beat butter and sugar.
  7. Add eggs.
  8. Beat.
  9. Pour the banana mixture into the butter mixture.
  10. Beat.
  11. Add all of the dry stuff.
  12. Beat.
  13. Stir in walnuts if you want them.
  14. Pour in pan and bake for about 50 minutes (or until toothpick comes out dry).
  15. I usually have to cover bread with aluminum foil the last 15 minutes, but that's probably because my oven is kind of a jerk.
