Tacos.
Ya’ll know I love me some tacos.
Would eat them daily if I could.
Personally, I dig hard tacos more than soft, but I am no taco purist and I make it a point to appreciate them in many of their variations.
Including salad.
Generally, I think of a salad as the main meal’s sidekick –not really in charge of killing hunger, but sort of holding it off until the big guns can get there.
Hangry would laugh in its face. After eating it of course.
If a salad wants to throw down with the big boys and enjoy main dish status, it’s going to need to pull some major heroics to convince me it is worthy.
Tasting like a taco is a surefire way to get that job done.
Cover it in a vibrant cape of homemade avocado dressing and basic baked chicken better be prepared to recognize.
And you should be too.
Taco salad, FTW!
Family Meal: Doritos Taco Salad with Avocado Dressing
- 1lb ground beef
- 1 package taco seasoning
- 1 can Rotel
- 1 can black beans, drained and rinsed
- 1 small bag frozen corn, thawed
- Iceberg lettuce, chopped
- Mexican blend shredded cheese (at least 1 cup for sprinkling)
- For dressing:
- 2 avocados, peeled and chopped into squares
- ¼ cup chopped cilantro
- ½ cup sour cream
- 1 tablespoon lime juice
- Salt and pepper
- water
- 1 tablespoon Olive oil
- 1 bag Nacho Doritos
- Brown ground beef, mix in taco seasoning (don't use directions on package, just sprinkle it in there).
- When halfway done add Rotel.
- Continue cooking until brown.
- Add beans.
- Add corn.
- Stir.
- Set aside.
- Get out your food processor so you can make your dressing. If you don't have one, it's cool, but your arms are gonna have a lot of chopping and smashing to do so let's hope you do!
- Add one avocado, cilantro, sour cream, lime juice, oil, salt and pepper to your food processor.
- Blend. Blend. Blend.
- Add water, 1 tablespoon at a time to smooth.
- Add a handful of lettuce to each bowl you plan to serve (or more if you're hangry), top with meat mixture, top with a few chopped avocados, drizzle with dressing, then smash a handful of Doritos (or two, if you like extra crunch) on top and sprinkle with the shredded cheese.
- Try to eat only one bowl
- *Note: Doritos are optional. This meal is good even if you don't use the chips.
