This week’s food win is making me a lump of mess on my couch right now.
My belly is soooo full.
From stuffing myself with the leftover version of this pasta recipe I made for dinner like two days ago.
I will say that while it was a major hit with my belly personally, it was not such a win with The Dudes. I mean they liked it, and they didn’t picket over it, but apparently, there is a such thing in this world as “too much cheese”.
It’s not a thing I’ve experienced in my lifetime, because I am sane and I know good things when I taste them, but when you’re not someone with such a well developed palate who knows that cheese is like ooey gooey mouth heaven, you might not enjoy a dish with as much creamy cheesy goodness as this.
Fortunately, I trust all of you to be sane people with well developed palates and I am comfortable sharing this recipe with you so that you too can enjoy its awesome up in your crib.
Creamy Penne with Spinach and Chicken Sausage Pasta Recipe
- 1 pound chicken sausage, sliced (I use the big rope kind you have to slice yourself).
- oil for cooking (I used coconut oil but you can use what you like)
- 1 small bag fresh spinach
- ⅔ cup chicken broth
- ¾ of a box penne pasta (16 ounce size), cooked (you can use the whole box, but you will want to increase your sauce a bit).
- ⅔ cup heavy cream
- ½ cup grated Parmesan cheese + more to sprinkle on top
- Dried oregano for sprinkling
- Cook pasta and set aside.
- Toss pasta with olive oil so it doesn't get all sticky.
- While pasta is cooking, heat oil in large skillet and cook the sausage.
- When nearly done, add spinach to pan.
- Once spinach has cooked down, and chicken broth.
- Bring to a boil.
- Add your cooked pasta to the pan along with the cream.
- Season with salt and pepper to your liking.
- Allow too cook for about 3 minutes.
- Add the cheese and stir in.
- Remove from heat.
- Serve into plates and sprinkle with cheese and oregano.
- Get a fork and grub!
